Gluten-free Pasta Salad with Spinach, Olives, and Sausage

 

I’m so happy this day is finally here.

Today, we’re celebrating my most beautiful friend, Bev and her TWO babies that will (hopefully hang tight and) be here in early January! I’m always happy when people announce they’re expecting, but Bev’s news was almost as exciting as my own. I may have even cried.

I met Bev a few years back and it was like we’d been friends since the beginning. If you read her blog, I can confirm, that is her in real life. Hilarious, creative and absolutely lovable. I know that getting to this day was no walk in the park (her story here), which is why celebrating her and these beautiful babies is so special. Bev – I couldn’t be happier for you and Aaron and the little blessings you’ll soon be holding in your arms. So much love for you and your family.

I know this girl loves her pasta so I made this delicious pasta salad that my family and I scarfed down seconds after I was finished. All the flavors compliment one another nicely and the best part, it’s super easy!

 

 

This was taken of us at BlogHer Food and I was (7 months?) pregnant and TWICE the size of miss Bev and I only had one child. Bev, I kinda love hate you. And that’s Betsy in the middle (Hi Betsy!). Gosh, that was such a fun weekend. Even though I wanted to stay in bed the entire time…  It was still amazing.

Gluten-free Pasta Salad with Spinach, Olives, and Sausage

Serves 4

PRINT Recipe

Ingredients

  • 8 ounces gluten-free Rotelle pasta
  • 3 tablespoons pesto
  • 1 package (4 pieces) of gf sausage – I used spicy pork, sliced
  • 1/2 cup sun-dried tomatoes (in oil), chopped
  • 1 cup kalamata olives, pitted and sliced
  • 1 cup fresh spinach, chopped
  • 1/2 cup feta cheese

Directions

Cook pasta according to the package.

Drain and place back into the pot. Toss with pesto and set aside.

In a small saucepan over medium heat, add the sausage and cook until nicely browned, about 6-8 minutes.

Add the sausage, sun-dried tomatoes, olives, and spinach. Carefully toss until everything is mixed together.

Serve with feta and enjoy!
