My mornings usually begin with me trying to hit the baby monitor as if it were my phone alarm. Eyes half open, I head up, grab him and bring him into our bed (after a quick diaper change). It’s about 10 minutes of little giggles and big smiles. He usually plays in our bed while I shower and get ready. Then I get him dressed and depending on our timing, I’ll give him a bottle before we head into work and daycare. Or they’ll feed him there.
Right after I get him buckled in his carrier, I make myself a cup of coffee. I pour it right into mug. I personally think it tastes better without a lid. It fits nicely in my cup holder, but usually hold it in my hand or rest it on my leg. Mason usually falls asleep before we’re out of the neighborhood. I hate driving, but there’s something very relaxing about a sleeping baby in the back, cup of coffee and trashy morning radio.
After I drop Mace off at daycare I get settled at my desk, usually earlier than the rest. I eat my yogurt and make my way to the espresso machine and make one more coffee. Then, my work day begins.
Ben and I use to make iced mint coffee on the weekends when we were living in California. There was a coffee shop down there that inspired this, which was a treat whenever we were on the road. Such sweet memories.
A hot summer day, this is hits the spot 100%.
Oh, coffee brings me so much happiness. Makes me happy just talking about it.
Mint Iced Coffee
- handful of fresh mint, about 6 leaves
- 1-2 teaspoons sugar
- 1 cup strong brewed coffee or an americano
- 1/4 cup cream or milk
With a muddler, firmly crush the mint and the sugar in the bottom of a large glass. Fill with ice cubes, then pour the coffee on top. Add the cream or milk and mix together.
