Beet happy, get it? Sounds like beeee happy. Yeah, I’m that awesome.

I’m also that delirious. It’s what happens when I write late at night, TV on in the background, baby monitor sitting next to me <waiting for baby to stir> and I’m looking at the clock realizing I still need to pump.

So, about that juice…

 

I started the series off yesterday with the Lean & Green and today is another favorite, Beet Juice!

Beets are a low calorie and heart healthy root vegetable. Roasted brings out a sweetness in them  and personally, I like to eat them like they’re candy. I’ll eat them raw when sliced or grated finely, like in this salad. They have more of an earthy flavor when raw, but when combined with apples, lemon and a little ginger in this juice, everything just comes to life. The juice has a nice balance of flavors and the ginger adds a nice spice to it. This is a favorite that I usually enjoy mid morning when I’m coming off my first cup of coffee. It wakes my ass back up, but without the caffeine.

Beets, I just love them, raw, roasted or juiced.

 

 

Okay, can we just take a moment and talk about how AWESOME The Voice is making my Monday and Tuesday nights. The banter between Blake and Adam makes me laugh out loud. Adam, well… he’s not so bad to look at. None of them are, actually. I also like the addition of Shakira and Usher, they’re a nice compliment to the team.

Oh right, the talent. They all make me wish I could sing.

 

 

Beet Happy Juice

serves 2

PRINT Recipe

INGREDIENTS

  • 3 whole beets, stems removed & cut in half
  • 1 green apple – quartered & seeded
  • 1/2 lemon
  • thumb size of ginger

DIRECTIONS

Turn on the juicer.

Add beets, apple, lemon and ginger.

Pour the fresh juice into a glass, and enjoy!

Fresh juice is best consumed immediately after juicing and would recommend not going more than 3 days.

note: you don’t need to peel the ginger or cook the beets. only reason you have to even cut the items is so they fit into the juicer. Yep, easy as that! Also, if there’s too much pulp, strain through a sieve or other strainer one to two times to reduce the pulp.

    One of my fave juices. I would probably put a lot more ginger in there because I like it a bit spicy. Can’t go wrong with beets though, they are just so good for you!

    We just bought a juicer this evening… I have so many recipes I’m dying to try but this is landing at the top of my list! I always hated beets as a kid, and when I got a bunch at the farm last year, I just gave them to my parents. Maybe this will teach me to appreciate the beet?
