Almond Butter & Banana “Quesadilla”

Gluten-free or not, kid or adult, this Almond Butter & Banana “Quesadilla” will totally knock your socks off.
Yeah, I said it. KNOCK YOUR SOCKS OFF.
It’s super easy and a healthy option for your little one, whether it’s served for breakfast, snack or even dessert. Sandwiched between two tortillas, the sliced bananas and almond butter, slightly warm make this a comforting, but also healthy option. If there’s a peanut allergy, you can swap out the almond butter for a seed butter.
I figured the sprinkle of cocoa powder and powdered sugar on top would be the ultimate selling point for any wee one.
Almond Butter & Banana “Quesadilla”

Ingredients
- 4 white or yellow corn tortillas
- 1/4 cup almond butter – or you may use peanut butter or a seed butter if there’s a nut allergy
- 1 banana, peeled
- 1 tablespoon cocoa powder – optional
- 1 tablespoon powdered sugar – optional
Directions
Mix the cocoa powder and powdered sugar in a small bowl. Set aside.
Warm your frying pan over medium heat. Spray with non-stick and add one tortilla at a time and using tongs, flip after a few minutes or until it’s just slightly golden. Continue with the rest of the tortillas.
Spread almond butter on one side of each tortilla. Add sliced banana on top of the almond butter to 2 of the 4 tortillas. Top with the tortilla with just the almond butter.
I tossed this back into the pan to warm everything up before cutting into fourths.
In a sifter or sieve, sprinkle the cocoa/powdered sugar mixture over the “quesadilla”
Best served and enjoyed immediately. *Once tortillas cool, they will harden and may be more difficult for little ones to eat
