Easy Baked Apples, Gluten-free

This is my quick and guilt-free version of apple pie.
You know when you just want a little bite of comfort, but without all the work? I’ve got you covered with these easy baked apples!
I’ve been eating more apples these days, usually at night with a little almond butter, but decided to spice it up. Before I even pulled them out of the oven, the entire kitchen smelled absolutely diiiivine! I suddenly got overly excited for Fall and then thinking about all the baby snuggles, I almost cried. Amazing what this baked apple can do.
If you’re looking for a little something something this weekend, I’d give this lucky one a try.
Easy Baked Apples, Gluten-free
Ingredients
- 1 apple, red or green
- 3 1/2 tablespoon gluten-free oats
- 1 tablespoon maple syrup
- 1 tablespoon brown sugar
- 1/4 teaspoon cinnamon, plus more for sprinkling
Directions
Preheat oven 350 degrees F.
Cut the apple in half and core out the middle.
In a small bowl, mix together oats, maple syrup, brown sugar and cinnamon.
Divide mixture evenly among the apple halves, placing in the center. Place apple halves on a baking sheet – cut side up, sprinkle with a little cinnamon and bake for 25-35 minutes.
Remove and seve with a nice scoop of vanilla ice cream – regular or dairy-free.
