Simple Lemon Pasta, Gluten-free Print Recipe Print Recipe

This week, it’s all about the lemons.

I think it’s a pregnancy thing, but I can’t seem to get enough.

This lemon pasta isn’t anything new. It’s been a family staple and comfort for years. I can almost guarantee every family member who opens this up has the biggest smile on their face. It’s a favorite and requested at every. single. occasion. Mom’s shaking her head in agreement right now. Aren’t ya mom?

I apologize now, there’s a lot more pasta recipes to come. It’s all I can eat these days, but who knows, maybe that will change. It just might be in 3 months, but it will change.

Yep, that’s it.

Well, plus a little olive oil and parmesan if you choose, which I do.

For those of you who can’t do dairy, don’t worry, this is just as good without the cheese. I ate this without for years and it was still my favorite.

My husband adds grilled chicken or shrimp for protein. I know it’s a lot of lemon, but I have a lemon chicken I’ll be sharing later this week, which he throws in. I typically have to double the batch of both the pasta and the chicken because we can literally eat this for days!

Often times it’s family style at our place and served directly out of the Le Creuset.

This is a great pasta dish to serve your guests or at family dinner. It’s so simple and its full of flavor. Plus, no one will even know it’s gluten-free, I can almost guarantee it.

Ingredients

  • 3/4 lb spaghetti, gluten-free – I used a corn based pasta
  • 4-5 garlic cloves, minced
  • 1/4 cup olive oil
  • 2 tablespoons butter
  • 1/2 cup fresh Italian parsley, chopped
  • 2 tablespoons lemon zest, grated
  • 1/4 cup fresh lemon juice
  • salt + pepper
  • Parmesan cheese

Directions

In a large pot, cook pasta as directed. Drain and then place pasta into a large serving dish or back into the pot.

In a small saucepan, heat olive oil and butter. Add garlic and cook until tender or fragrant. Pour the garlic & oil mixture over the pasta and then toss with parsley, lemon zest, lemon juice, salt and pepper.

Serve immediately with a side of parmesan cheese

I want a big bowl of this, asap. Looks so perfect – light but not too light, and with the lemons, mmmm, soooo good.

I actually wore all the enamel (well, most of it) off my teeth from eating so much citrus when I was pregnant. My dentist was not happy…and I didn’t care at all – hooray for comfort food – this dinner is the perfect little package!

I had pasta with spaghetti sauce for dinner (trying to use up the last of the sauce) but I would have gladly traded it for THIS. I can’t ever get enough lemon!

I really, really like alfredo sauce, but it’s just too rich for me. Pasta sauces with lemon, garlic, and herbs have been my savior. This looks delish!

Un plat de pâtes, je craque. Par contre, mon fils n’appréciera pas,à faire quand il est absent. Il n’aime pas le citron.
    Bonne journée, FLaure
