Watermelon and Mint Lemonade

My watermelon intake has gone to an unhealthy level and there’s no intention of stopping. The day I turn red, then maybe I’ll cut back.
Typically, I just cut the melon in half and take a spoon to it. I don’t waste time cutting it up.
Although we’re not going anything crazy this 4th of July, unless you call unpacking crazy… I was inspired by this awesome idea and my current obsession to make this watermelon lemonade with blueberry skewers in spirit of the 4th. It was the perfect refreshment, that I drank both servings.
Please, by all means, feel free to add vodka or tequila to this. Then have another for me.
Watermelon and Mint Lemonade with Blueberry Skewers
PRINT Recipe
Ingredients
- 1/2 seedless watermelon, rind removed – about 1 cup juice
- 10-12 leaves of fresh mint leaves, stems removed
- 1/4 cup fresh lemon juice – little more if you like it on the sour side
- 1/2 tablespoon honey or agave
- 1/2 cup ice water
- 1 cup fresh blueberries
- 4 skewers
Optional for non-prego ladies & men: VODKA
Directions
If you have a juicer, juice watermelon and mint leaves. If not, Puree the watermelon and mint leaves in a blender of food processor and puree, then strain through strainer to remove pulp and seeds.
In a pitcher [or large mason jar] combine 1 cup watermelon juice, lemon juice, honey/agave and ice water. Mix [or shake] until combined. Place in the fridge for a few hours or until cold.
Mix well and then divide the watermelon lemonade between two glasses. For blueberry skewers – skewer about 10 blueberries and drop them into the glasses.
