Watermelon and Mint Lemonade Print Recipe Print Recipe

My watermelon intake has gone to an unhealthy level and there’s no intention of stopping. The day I turn red, then maybe I’ll cut back.

Typically, I just cut the melon in half and take a spoon to it. I don’t waste time cutting it up.

Although we’re not going anything crazy this 4th of July, unless you call unpacking crazy…  I was inspired by this awesome idea and my current  obsession to make this watermelon lemonade with blueberry skewers in spirit of the 4th. It was the perfect refreshment, that I drank both servings.

Please, by all means, feel free to add vodka or tequila to this. Then have another for me.

Watermelon and Mint Lemonade with Blueberry Skewers

PRINT Recipe

  • 1/2 seedless watermelon, rind removed – about 1 cup juice
  • 10-12 leaves of fresh mint leaves, stems removed
  • 1/4 cup fresh lemon juice – little more if you like it on the sour side
  • 1/2 tablespoon honey or agave
  • 1/2 cup ice water
  • 1 cup fresh blueberries
  • 4 skewers

Optional for non-prego ladies & men: VODKA

If you have a juicer, juice watermelon and mint leaves. If not, Puree the watermelon and mint leaves in a blender of food processor and puree, then strain through strainer to remove pulp and seeds.

In a pitcher [or large mason jar] combine 1 cup watermelon juice, lemon juice, honey/agave and ice water. Mix [or shake] until combined. Place in the fridge for a few hours or until cold.

Mix well and then divide the watermelon lemonade between two glasses. For blueberry skewers – skewer about 10 blueberries and drop them into the glasses.

Speaking of prego… I totally had a dream I was pregnant the other night.  It was totally bizarre!

But, yes, I will be putting vodka in mine, because I am not prego (thank goodness… that would be frightening).

I love this! It looks so refreshing. I’m ready to dive right in.

P.S. Is there such a thing as an unhealthy level of watermelon intake? My baby girl was made of watermelon and cucumbers. For one hot July when I was pregnant, it’s all I could eat!

I sure hope there isn’t, but I certainly eat more than the average person, but maybe not pregnant person. I think I like your combination better, much healthier! My poor guy is being filled up with watermelon, vanilla milkshakes and pasta 🙂

Gorgeous idea…If one “does” the vodka route..how much should be added?…

  • Anonymous

I would just add a little [1-2 oz], taste it and then add more until you’ve reached the desired combination, juice to vodka. Enjoy!
