Being pregnant with an appetite of a five year old [boy], all while trying to maintain a HEALTHY gluten-free food blog, is becoming rather challenging. I’ve also been in Seattle this past week visiting family, which means I haven’t unpacked our kitchen in Portland yet. This weekend, it’ll happen.

I don’t know how many of you eat PB&J’s anymore, but I’m telling you, grilling them is like a WHOLE NEW sandwich. Warm sandwiches are my new thing.

If you’re not into it, I bet your five year old will be.

What you need:

  • bread – gluten-free or whatever you prefer
  • peanut or almond butter
  • jelly of choice
  • butter or cooking spray

Still working on the details, including deciding on a name. Baby brain = indecisive. Hoping to have it ready to share sooner than later, stay tuned!

    Being 21.5 weeks pregnant with my first baby, I SO feel this. I once considered myself a vegetable lover and healthy vegetarian, turning up my nose at things like gooey mac n cheese and bowls of ice cream. Now it seems like I can’t get enough cheese! Vegetables make it to my plate if I think about it, but the salads and stir-fries once a staple in my diet have been replaced by noodle casseroles and trips to the frozen yogurt shop. Too. Many. Trips.
    It’s sad, but I actually bought an indoor grill so I could make deliciously melted panini. I’ve never been more excited about a kitchen appliance.That said, I already planned to take a PB&J to class today, but now I might just have to grill it, too…

    Oh girl! Grilled ANYTHING sandwiches are my jam! I could eat one every.single.day. My new sammy is grilled cream cheese + fruit. Amazing! And I’m excited about your baby blog. You look beautiful!

    Oh dang.. if I eat and love PB&J sandwiches now and I’m not pregnant, does this mean I’ll not want them when I am pregnant? I sure hope not! – now I’m scared lol.
    I haven’t tried them on the panini grill yet. Putting that on the to do list for this weekend!

    1) Best blog post title ever, I love it  and 2) you look adorable!  I can’t even imagine how challenging it must be for you to stick to a healthy diet right now. In times of craziness and transition (let alone not having a fully functional kitchen), I find that is one of the hardest times to eat well, but adding in the hormones from a pregnancy and it sounds impossible. I am sure you are doing great!

    I love PB&J, I even eat the crust now that I’m an adult, LOL!  So happy to hear about the new blog, hopefully living vicariously will help curb my baby fever since we’re not on that train yet 😛
