Yesterday was my husband’s birthday. He’s not a fan of birthdays. but, I am.
We’re currently living in the middle of chaos and the poor guy’s stress levels are turning is hair grey by the minute. Since we’re on a tight budget, I decided to CLEAN the entire apartment – an act I haven’t been doing, finished the laundry, and then get dinner prepped. I kept it simple and did homemade [gluten-free] pizza with truffle oil, white sauce, and arugula – thank you Melissa for the tip! Then another one with the addition of pepperoni & canadian bacon. Wild guess who that one was for.
He had asked that I don’t bake any sweets. He’s trying to watch his figure. Right, with a pregnant wife, good luck. So, I surprised him with a date to a favorite gelato spot down the street that we’d been dying to try. For some reason that doesn’t count in his book.
Then.. [my] mom’s famous salad, a comfort for everyone. Ben’s face lite up when he 1. saw a clean apartment 2. I pulled out “mom’s salad” and 3. we’re having pizza and gelato. To top it off his childhood best friend stopped by for a little birthday dinner and one last goodbye. It was such a fun night and was nice to see him relax and forget about everything else going on. Happy birthday, handsome!
It’s a very simple and easy salad and has been a family staple for years! It comes out at Holidays, Sunday dinners, surprise house guest, etc. It’s refreshing, a touch of sweet and compliments almost any dish.
If you’re still searching on what to make this Memorial Day weekend, I HIGHLY suggest this salad. I’m not kidding, I’m constantly asked for this recipe. I think the secret lies in the salad dressing, truth be told.
Today I’m heading to spend the long weekend with my parents on Orcas Island, where my they just finished building a beautiful home. We’ve had that property for over 40 years and it’s probably my most favorite place on earth. My husband and I even considered getting married there. It’s a special place.
You’re probably wondering why I’m leaving for the weekend when we’re moving next Thursday. Yeah, have I mentioned I have the most amazing husband?! When my parents asked if we’d be interested in joining them, my husband encouraged me to go while him and his dad – who’s flying down in a few days, pack up the apartment. He doesn’t want me touching a thing because I’m pregnant. I can’t say I really fought it… I’m spoiled, FACT.
I’m giddy excited to see my parents who I haven’t seen since… Hmm… March maybe? That’s a long time for me. Plus, this will be the first time they get to see this
incredibly large baby bump! I think my dad might actually screen and my mom, I already know her look. We have the same one.

Mom’s Orange and Cranberry Salad Recipe
- 1 garlic clove, chopped
- 1/2 teaspoon salt
- 1/4 cup olive oil
- 1/4 cup red wine vinegar
- 1/4 cup agave, honey or sugar
- pepper to taste
- 4 cups lettuce mix
- 1 small can of mandarin oranges, drained
- 1/2 cup dried cranberries
- 1/4 cup slivered almonds, toasted
To make the dressing, add ingredients to a shaker/mason jar and shake or add to a bowl and whisk. Place in the refrigerator until ready to dress.
To prepare the salad, put the lettuce in salad bowl and add mandarin oranges, and cranberries. Mix the dressing before drizzling a little over the salad and toss to combine. Add more dressing to your liking. Sprinkle toasted almond pieces and serve immediately.
