Oh helloooo cheesy comfort. You make me happy.

I’m pretty sure I was still living at home [when I wasn’t lactose intolerant] the last time I ate a grilled cheese. A cheese-less  grilled cheese, I don’t think so.

ps. Did you know this is National Grilled Cheese Month??


Have any of of you tried Drunken Goat Cheese?

Most goat cheese I’ve tried is softer and has a different consistency, but THIS is outstanding on crackers, toast and of course grilled cheese.

Since it’s from a goat, it’s easier to digest for those sensitive to dairy. It’s not exactly dairy-free so if you’re allergic, I wouldn’t recommend.

Before I realized I could eat dairy again – it’s a crazy pregnancy thing, I stuck with goat & sheep cheese.


Sometimes, I’ll toast a slice of bread and then add thin slices of cheese on top.

Breakfast, lunch, snack – it all goes.

I like to cut my grilled cheese small enough to dunk into tomato soup. always.

If you’re in the mood, here’s my amazing tomato soup recipe. However, I’ve been eating store bought garden tomato that my husband bought when I was stuck in bed. Once tomatoes are back in season, I’ll make a big batch.

Other items you can add to your sandwich include:

  • avocado
  • ham
  • tomatoes
  • apple slices

Grilled [drunken goat] Cheese Sandwiches


  • 2 slices of Gluten-free bread – I use Udi’s
  • 2-3 ounces of Drunken Goat cheese
  • Butter or cooking spray


Heat griddle or pan on medium heat. Either spray with non-stick OR butter your bread – just one side of each piece. Once the pan is warm, place the buttered side of your bread down. Add slices of cheese on top, covering the surface and overlapping just slightly. Top with the second piece of bread, buttered side up.

After a few minutes, the bottom should be browned, flip the sandwich to toast the other side. Once the cheese has melted and both sides are lightly browned remove, cut to your preference and enjoy!


Makes ONE yummy sandwich

    I think I have tried drunken goat cheese before! There are a number of goat and sheep milk cheese out there that make a pretty spectacular grilled cheese sandwich – I’ve actually found that my tummy prefers the sheep milk ones.

    I totally agree on the grilled cheese/tomato soup combo.  My favorite grilled cheese is extra sharp cheddar, honey mustard, and tart apple on gluten-free cinnamon raisin bread…especially when served with butternut squash soup 🙂

    I adore Udi’s bread, and especially for grilled cheese. I am going to be on the lookout for this drunken goat cheese. I made a grilled cheese with crumbled goat cheese this weekend and it is my new favorite. I love this!

    not everyone can tolerate goat cheese, but a lot of people who can’t do dairy, are able to do goat and sheep cheese – it’s definitely worth giving a try!

    I love goat cheese but usually we end up baking it with a crisp coating! Putting it as a sandwich totally negates the need for the panko and oil. Rough chop some spinach and toss it in? Wow.
