I hate to admit that this was this and spaghetti were the only two things I made this weekend.

It’s been rather challenging being in our apartment and neither of us have energy to cook so it’s been Whole Foods Dinners, take out, and frozen [gf] pizza. I hope this passes.

This is going to be a good week, I can feel it.

 

 

My husband and I took a trip to the Farmers Market on Sunday and the first purchase were these beauties. Within the hour of coming home, I made this milkshake. Since I don’t do dairy, I made mine with vanilla bean, coconut ice cream. For Ben, I made with regular. Both, equally amazing.

It also happened to be a hot day, which made this even more perfect.

Next, I think it will be ice cream or muffins with the leftover strawberries.

 

 

My husband and I have been on a total ice cream and frozen yogurt kick, so on Saturday we bought an ice cream maker. I had a gift card and we were obviously in need of some retail therapy.

You guys, I. cannot. WAIT to make ice cream.

Next time you see me, I may be 15 -ice cream lbs heavier. Hey, it’s part of the job.

 

 

Strawberry Milkshake, Dairy-free

PRINT Recipe

Ingredients

  • 1 1/2 cups fresh strawberries, stems removed and halved
  • 1 cup coconut milk, vanilla bean ice cream – you can use regular if you prefer
  • 1/4 cup almond milk
  • dash of vanilla extract
  • a few ice cubes

Directions

Add strawberries, ice cream, milk, vanilla extract and ice to the blender and blend until smooth.

Pour and enjoy!

 

Makes one tall glass or two small [kid size] glasses

*gluten-free *dairy-free *vegan

    Looks delicious! I am planning to buy strawberries today and will keep this in mind. 

    I have a suggestion for you for the left over strawberries (and since I made these last week and want to make it again!): Strawberry Rhubarb muffins. 
    They were very moist and my husband’s coworkers loved them. I made them with regular flour and whole milk, but plan on getting gluten free flour for the next batch and using either almond or coconut milk.

    I use yogurt (any flavor you want), a yogurt container of milk, any berries or fruit that I want + a cereal like Kashi Go Lean. Blend them all in the blender and enjoy. My strawerry shake is usually made with frozen strawberries, either strawberry yogurt or vanilla flavor. I use yoplait light yogurt. A yogurt container of milk and my cereal. If you want a little more flavor add some strawberry flavoring or any other flavor you want. Sometimes I even add a banana to all of this. 1 meal in a glass. Makes 1 large glass or a couple of smaller ones.
