Well look at that, Monday and reality have collided, once again.

I apologize for the late post. Both my flights yesterday were delayed and I didn’t get home until after 2am. Then woke up and the blog was down. I took that as I sign that I should go back to bed, so I did & dreamt that I was still in Mexico…

I came home and found a bunch of beets in the fridge. The Mr. know’s I need a good reset after 5 days filled with food & wine.

Beets have that both an earthiness and sweetness about them. I love them plain, on salads, in quinoa and now, in smoothies. There really  isn’t a way I wouldn’t eat them.

Any other beet lovers out there?

With the sweetness of the strawberries, earthiness of the beets and the spice of the ginger, it’s the perfect reset smoothie. Just in time for Spring.

Gingered Beet Smoothie

Ingredients

• 1 beet, cooked and quartered
• 2 cups strawberries, frozen
• 1 cup unsweetened almond milk – or milk of choice
• 1-inch fresh ginger, chopped
• honey or stevia for sweetener
• Ice

Directions

Add all ingredients into your blender and blend until pureed. If you need more liquid, I usually add water.

Pour into your glass and enjoy!

Makes 1 big or 2 small glasses
