St. Patrick’s Day: Taste the Rainbow Print Recipe Print Recipe

I tried to make cute little green cookies for you. They were a fail. I’d like to blame the baking powder since this is the fifth baking fail in a row and I’ve tried everything. So, I’m taking a break at the moment.

Plan B. I went to the store, bought skittles and chocolate gold coins, put them in glasses [or a jar] and there you have it. My interpretation of gold at the end of a rainbow. BTW: Did you know directly on the Skittles packaging it says, “gluten-free”. Kinda awesome.

If you’re stuck on what to do, here are some other fun last minute ideas:

  • Add green food coloring to your pancake or waffle mix
  • Add spinach to your banana smoothie
  • Rainbow fruit plate [blueberries, green grapes, pineapple, cantaloupe, strawberries – at the end you can do banana slices or gold chocolate coins
  • Green sprinkles in your popcorn
  • Dip [gluten-free] pretzels in white chocolate, then into green or St. Patrick’s day sprinkles
  • Healthy Shamrock Shake [light [or coconut milk] ice cream, almond milk, green food coloring, little whipped cream and green sprinkles]
  • Green rice crispy treats – add the green food coloring to the marshmallows
  • Fill a container with gold coins & skittles [see below] and put them into your child’s lunch.

This St. Patrick’s Day, which falls on Saturday, the Mr. and I will be on a plane heading home to Seattle to visit family. One family member throws a HUGE St. Patty’s day party and everyone and they’re cousin will be there, including us. Then I get to see my BFF one last time before she run’s back to Canada to have her baby [EEK!]. Finally, it’s back home to pack and off to Mexico!

Is it bad that a good beer is the perfect Saint Patty’s Day treat? And of course my grandmother’s corn beef & cabbage.

Mmm I love Skittles! I haven’t had them in such a long time, but would buy a package when I was a kid. I like making something chocolate and Guinness on St. Patrick’s day!

  • Cassie @ Bake Your Day

Incredibly cute! I had no idea Skittles were GF, good to know!

  • Kate

    Adorable idea!

  • Bev Weidner

Love the little world market jar with the green lid!

  • Emily @ Glitz Glam Granola

What a cute idea just to sort the skittles by color and place them in different cups! Simple and adorable! I love that they are now saying they are GF too! The more package labeling on things the better! Have a great time at your fam’s party and with your friend!

Ah I love this idea! So cute!

I also had some epic fails while trying to bake st. patty’s day fun treats! I attempted a chicken shepherds pie (gluten free too), that was super yummy but not very photogenic.  I finally scored with some Irish Soda bread that will go up tomorrow.

Thanks for all the other recommendations for adding a little green into our days. Great post!

    they’re Ben’s favorites, too funny!

Such cute photos. I love the rainbow with the gold at the end. I never buy skittles because when I do I eat them compulsively until I’m sick and my teeth ache. It’s a bad scene for me. They are too good.

Ok, I’m totally using this idea for a little St. Paddy’s Day party I’m having tomorrow! I’m making a regular roasted garlic and white bean dip “green” with the addition of a couple avocados!

  • Dulce De Leche

i love the jars and was wondering where did you get em lol

  • WithStyleGrace

    I think World Market/Cost Plus!
