Ben’s [Light] Chicken Nachos

Ben’s back  in the kitchen and this time he’s making nachos for Super Bowl Sunday!
What team are you rooting for? and go ahead, tell everyone how much you love Tom Brady.
oh shit, it’s Eli Manning and Tom Brady. I hate them both.
How much do you looooove the super bowl? <this is a trick question>
not as much as I love my wife’s birthday that always falls on that weekend. What, was that not funny?
<he read my look. damn, he’s good.>
Why nachos? Do you consider these to be healthy?
Because I wanted a different way to eat a taco. it’s the same thing really, I just replaced the tortilla with tortilla chips.
I’m going to call it a deconstructed taco.
Yes this is a healthier version. I made these with low fat refried beans, baked chicken breasts and I didn’t pile on a lot of cheese, even though I was tempted.
Why healthy nachos?
So I can drink more beer.
What your ideal super bowl menu?
ahhh.. this is where I get to have fun.
2 bags of Doritos, nacho cheese and cool ranch
pigs in a blanket
turkey chili with low fat cream cheese
ahhh, a bunch of keystone and grandma Leola’s chocolate fudge!! or maybe it was Suzie’s fudge. JoAnn’s? Joy?? Is it too late to call my parents? <what just happened here? yes, it’s too late>
Okay, this only happens once a year, it’s my cheat day. <no judgement>
Complete the sentence, Nachos and _________
PRINT  Recipe
Preheat oven to 375 degrees.
Spray baking pan with non stick and line with chips. First layer, add refried beans, chicken and cheese.
Add a second layer of chips, refried beans, chicken and cheese. Top with fresh tomato.
Bake for 10-15 minutes or until cheese is melted.
Remove from the oven and top with desired toppings.
