Ben’s back in the kitchen and this time he’s making nachos for Super Bowl Sunday!

How much do you looooove the super bowl? <this is a trick question>

not as much as I love my wife’s birthday that always falls on that weekend. What, was that not funny?

<he read my look. damn, he’s good.>




Why nachos? Do you consider these to be healthy?

Because I wanted a different way to eat a taco. it’s the same thing really, I just replaced the tortilla with tortilla chips.

I’m going to call it a deconstructed taco.

Yes this is a healthier version. I made these with low fat refried beans, baked chicken breasts and I didn’t pile on a lot of cheese, even though I was tempted.


Why healthy nachos?

So I can drink more beer.



What your ideal super bowl menu?

ahhh.. this is where I get to have fun.

2 bags of Doritos, nacho cheese and cool ranch

turkey chili with low fat cream cheese

ahhh, a bunch of keystone and grandma Leola’s chocolate fudge!! or maybe it was Suzie’s fudge. JoAnn’s? Joy?? Is it too late to call my parents? <what just happened here? yes, it’s too late>

Okay, this only happens once a year, it’s my cheat day. <no judgement>

Ben’s Lightened Chicken Nachos, GF

PRINT Recipe


  • Corn tortilla chips [gluten-free]
  • Ben’s homemade refried beans – or store bought
  • Chicken, cooked and diced
  • Fresh tomatoes, diced
  • Mexican cheese blend [cheddar, Monteray, Asadero, Queso Blanco]


  • Avocado, diced – or guacamole
  • Sour cream
  • Fresh tomatoes/Salsa
  • Hot Sauce


Preheat oven to 375 degrees.

Spray baking pan with non stick and line with chips. First layer, add refried beans, chicken and cheese.

Add a second layer of chips, refried beans, chicken and cheese. Top with fresh tomato.

Bake for 10-15 minutes or until cheese is melted.

Remove from the oven and top with desired toppings.

    I have to make these!  Everything I have made of yours my husband has loved, and he’s not always a fan of my healthy cooking.  He especially LOVES Ben’s refried beans, we made them last week and he couldn’t stop raving about them!

    We don’t have Super Bowl night but we have Soccer championships everywhere, and it’s the same, a group of men in front of the TV that can eat and drink whatever hey found in the table. So, making them something healthy sound perfect, and this nacho dish looks exactly what they may want, somrething that looks “not healthy” but IS.
