Moving on. Why didn’t anyone tell me how awesome Body Pump is?? Just kidding Maria, pretty sure you’ve been telling me about it since the day we met. Now, WHY DIDN’T I LISTEN TO YOU?? I love when someone else kicks my ass in the weight department. Cardio, I’m fine. Weights, forget it. Best part, 45 minutes after class and I was already sore.
My husband, “Pain is only weakness leaving the body”. Thanks, really.
For moments when I’m starving and can hardly find the energy to cook [1/2 lazy], I’m thankful for my 5 minute dinner’s like this.
One day a week, I’ll roast a bunch of veggies [mix varies], bake several chicken breasts and sweet potatoes and keep on the fridge for meals that week.
Ingredient Options:
- [Leftover] roasted vegetables – zucchini, yellow squash, etc.
- Protein, such as grilled chicken.
- Dried cranberries for a little sweetness
- Cheese – depending on preference
- Nuts – walnuts or almonds, chopped and toasted
Throw in a little or a lot of whatever ingredients you chose. Season with salt + pepper [ or lemon pepper, another fave] and Enjoy!
