[Gluten-free] Pumpkin French Toast Print Recipe Print Recipe

Rain.  Rain.  Rain.  all weekend long.

*happy dance, happy dance*

I’ve been not-so-patiently waiting to pull out my cozy sweaters, drink hot chocolate and watch Christmas movies.

Yeah, I said it. CHRISTMAS MOVIES.  all weekend.

Which then reminded me. . . grandpa would always make us his “special” french toast every Christmas morning.  It hit a sentimental cord.

So, while my husband is working this weekend – it’s Christmas movies and pumpkin french toast for me!

Alright fess up, who’s already watched a Christmas movie? If so, which ones? Favorites?
If not, will you be joining me this weekend? Great, it’s a date!

ps. don’t forget to check back here on Monday, I’m sharing something VERY exciting! [nope, not pregnant, guess again].

Pumpkin French Toast, gluten-free

PRINT Recipe

  • 3 eggs
  • 1/4 cup pumpkin puree
  • 1-3 tablespoon almond milk [or milk of choice]
  • 1 teaspoon of ground cinnamon
  • pinch of nutmeg
  • 1 teaspoon vanilla extract
  • 4 slices gluten-free bread
  • optional – for sweetness, add 1-2 tbsp of brown sugar

Suggested Toppings

  • Pecans, chopped
  • maple syrup
  • Powdered sugar for dusting
  • Of course, butter

In a large shallow bowl, whisk together the eggs, pumpkin puree, milk, cinnamon, nutmeg and vanilla. Place the slices of bread into the egg mixture and let soak while the pan heats up [3-5minutes].

Spray skillet with non-stick spray in a large skillet over medium-high heat. Place all 4 slices of the bread into the pan and cook until golden brown on 1 side, approx. 2-3 minutes. Turn the slices over and cook until golden brown, 2-3 minutes longer. Remove and place two slices on each plate, top with toppings and enjoy!

I refuse to watch Christmas movies or listen to Christmas music until after Thanskgiving. I’m one of thooooose annoying people. However, I could make an exception if this french toast was made for me. I’ll watch Christmas Vacation in August, or February, whenever.

The seriously looks so good I can hardly stand it. I’m recently gluten-free and I’ve decided that with a little effort, it can taste better than gluten food. It’s so much fun trying new recipes and getting creative in the kitchen. Thank you for your inspiring blog.

I love french toast but my kids aren’t into it—what’s wrong with them?! I’ll have to save this recipe for the rare occasion when I’m eating by myself. Looks soooo good.

  • Marie

Can you recommend a brand of gluten-free bread? That one looks delicious! Thanks 🙂

my go-to is Udi’s. I also like Glutino (found in the freezer section at Whole Foods), but tends to fall apart more easily.
