[Gluten-free] Pumpkin French Toast

*happy dance, happy dance*
I’ve been not-so-patiently waiting to pull out my cozy sweaters, drink hot chocolate and watch Christmas movies.
Yeah, I said it. CHRISTMAS MOVIES. all weekend.
Which then reminded me. . . grandpa would always make us his “special” french toast every Christmas morning. It hit a sentimental cord.
So, while my husband is working this weekend – it’s Christmas movies and pumpkin french toast for me!
Alright fess up, who’s already watched a Christmas movie? If so, which ones? Favorites?

Pumpkin French Toast, gluten-free

Ingredients
- 3 eggs
- 1/4 cup pumpkin puree
- 1-3 tablespoon almond milk [or milk of choice]
- 1 teaspoon of ground cinnamon
- pinch of nutmeg
- 1 teaspoon vanilla extract
- 4 slices gluten-free bread
- optional – for sweetness, add 1-2 tbsp of brown sugar
Suggested Toppings
- Pecans, chopped
- maple syrup
- Powdered sugar for dusting
- Of course, butter
Directions
In a large shallow bowl, whisk together the eggs, pumpkin puree, milk, cinnamon, nutmeg and vanilla. Place the slices of bread into the egg mixture and let soak while the pan heats up [3-5minutes].
Spray skillet with non-stick spray in a large skillet over medium-high heat. Place all 4 slices of the bread into the pan and cook until golden brown on 1 side, approx. 2-3 minutes. Turn the slices over and cook until golden brown, 2-3 minutes longer. Remove and place two slices on each plate, top with toppings and enjoy!
