It’s Halloween and I never bought my pumpkin.  Lame.  I really wanted to post something cool with a pumpkin.

Instead, you’re getting my ghoulish GREEN MONSTER. You’re scared, aren’t you?

Don’t be, it’s really a mint chocolate chip milkshake, but shhhh….

ps. . . it’s delish!

Maybe you can convince your kids to trade you candy for this GREEN MONSTER [all caps = my monster voice]

Just don’t tell them there’s spinach in it.  They’ll never know.  You probably wouldn’t either.

I’ll take this gluten-free & dairy-free treat any day.

Mint Cocoa Monster Milkshake

Ingredients

  • 1  large frozen bananas
  • 1 tablespoon of chocolate chips [or 1/2 - 1 teaspoon of cocoa powder]
  • 1/4 teaspoon of pure peppermint extract
  • 1 cup almond milk [more or less depending on how thick you want it]
  • 1/4  cup frozen spinach [I add more to get more greens]

Directions

Blend everything together in your blender.

Optional: garnish with chocolate flakes

Enjoy immediately!

    My husband is away this evening, and I have all of these ingredients at home — a perfect Halloween sweet treat for one! I might try swapping out the mint extract for some fresh mint I picked up at the Asian market yesterday.

    Mmmm I always put cocoa powder and spinach in my smoothies but I’ve never had one with mint in it! Must change this immediately!

    Is that a typo in the amount of peppermint extract? Because I made this and it was inedible – like drinking toothpaste. I even made it with 2 cups of spinach and threw in a handful of ice, and it was horrible.

    oh no, I’m so so sorry! I just made this drink again and you’re right, it looks like the extract is just a few drops, closer to 1/8 tsp, not 1/4 tsp. My sincere apologies!
