Apricots with Greek Yogurt & Pistachios

I’ve been stocking up on all my favorite summer fruits before they start to disappear from the produce aisle.
One of the best parts about summer is the produce. Now my husband might not agree, but that’s probably because I drag invite him to farmers markets and u-pick berry farms. He’s [almost] always a good sport.
I reward with food.
Now, back to the apricots. They’re one of those summer fruits that I can never get enough of. It’s like candy. Sweet texture, full of flavor and easy to eat.
Hello apricots, hello health benefits.
Fresh apricots are full of beta-carotene, making it a heart healthy fruit. Anything to keep our hearts happy and healthy.
They’re also full of Vitamin A and C. Woohoo, two-in-one. Score!
Lastly, they’re a great source of fiber, something I can never seem to get enough of.
Ideas for these heart healthy yogurt “cups” . . .
- Add granola and make into a breakfast
- Serve with brunch
- Enjoy as a snack
- Pack in a to-go bag
- Travel/on-the-road snack

Apricots with Greek Yogurt & Pistachios
Ingredients
- Apricot(s), halved and pitted
- Greek yogurt [plain, vanilla, or honey] OR whichever type of yogurt you prefer
- Honey or sweetener of your choice
- Pistachios, chopped
Directions
In a small bowl [or in yogurt container], mix together yogurt and honey. Spoon the desired amount of yogurt into the center of the apricot(s). Sprinkle with pistachios and enjoy!
