Apricots with Greek Yogurt & Pistachios Print Recipe Print Recipe

I’ve been stocking up on all my favorite summer fruits before they start to disappear from the produce aisle.

One of the best parts about summer is the produce. Now my husband might not agree, but that’s probably because I drag invite him to farmers markets and u-pick berry farms. He’s [almost] always a good sport.

I reward with food.

Now, back to the apricots. They’re one of those summer fruits that I can never get enough of. It’s like candy. Sweet texture, full of flavor and easy to eat.

Hello apricots, hello health benefits.

Fresh apricots are full of beta-carotene, making it a heart healthy fruit. Anything to keep our hearts happy and healthy.

They’re also full of Vitamin A and C. Woohoo, two-in-one. Score!

Lastly, they’re a great source of fiber, something I can never seem to get enough of.

Um, seriously – that little dish is so cute I could give it a pacifier and rock it to sleep. Then eat it.

Such an adorable little snack! And it’s a combination of some of my favorite ingredients (though I sometimes have to hold back from eating too many apricots otherwise I get a bad tummy).

I made these for Easter brunch, and they make a great presentation and everyone liked them. I will definitely use this for the next pot-luck event that I attend. I used canned apricots, and combined greek yogury with cream cheese, honey, and a little sugar and mixed it up with the hand mixer and then topped with the nuts. I called them Deviled Apricots, because they look like little deviled eggs.
