My stomach fell when I read this tweet from Jennifer Perillo, a complete stranger, yet a distant friend in the food blogging community, who had just lost her husband – Sunday August 7th.

I can’t even begin to imagine.

The following day I sat in the airport watching my twitter feed fill with love, gratitude and compassion for her and her family. I hardly knew anything about her, yet I could feel my eyes get heavy, filling with tears that I was determined to hold back. I held it together and called my husband, told him how much I loved him and that I couldn’t wait to come home and hug him. My heart was beating fast, again trying, but unable to hold back the well of tears building up as I said goodbye.

It was the a year ago that my husband was curled up next to me, on my hospital bed, fearful he might lose me. This doesn’t even compare to Jennifer’s loss, but it’s a reminder that life is short so [please] make the most of it.


A few days later, she posted this and I didn’t think twice before jotting down the list of ingredients and racing off to the store. I was ready to make my first Peanut Butter Pie.

I made this pie with love and in honor for a Jennifer and her family. I also made it for my husband. Ben, I love you with all my heart.

Last night, my husband and I stood over the kitchen counter with forks in our hands, smiling as we continued to take our “one last bite” of the peanut butter pie. It was heavenly. With big eyes, smiles on our faces and open hearts, we cherished that moment.

Gluten-free {Creamy} Peanut Butter Pie Recipe

Inspired by Jennie’s Kitchen

Ingredients

  • 8 oz gluten-free chocolate chip cookies + 1 tbsp cocoa powder
  • 4 tablespoons butter, melted
  • 4 oz semi-sweet chocolate chips
  • 1/4 cup chopped peanuts, unsalted
  • 1 cup heavy whipping cream
  • 8 oz fat-free cream cheese
  • 1 cup creamy peanut butter
  • 1 cup confectioner’s sugar
  • 1  14oz can sweetened condensed milk
  • 1 teaspoon vanilla extract
  • 1 teaspoon fresh lemon juice

Directions

In a food processor, add cookies and pulse until they become crumbs. Empty cookie crumbs into a small bowl and add  melted butter, mix well. In a 9″ pie pan, press the cookie mixture into the bottom and up the sides about an 1-inch.

In a double boiler, melt chocolate. Pour and spread melted chocolate over the  bottom of cookie crust. Sprinkle the chopped peanuts over the melted chocolate. Place pie pan in refrigerator while you prepare the filling.

In the bowl of an electric mixer, beat heavy whipping cream on med-high speed until stiff peaks form.  Transfer whipped cream into a small bowl and place in refrigerator.

Using the electric mixer, beat cream cheese and peanut butter on medium speed until well combined.  Reduce to low speed and slowly add the confectioner’s sugar. Mix in the sweetened condensed milk, vanilla extract and lemon juice. Mix until all the ingredients are well combined – filling should be smooth.

Remove the whipped cream from refrigerator and stir about 1/2 into the filling mixture. Fold in the remaining whipped cream. Remove pie pan from fridge and pour in the filling.

Refrigerate for at least three hours or overnight before serving.

Optional – Drizzle melted chocolate, whipped cream &/or chopped peanuts over the top.

    Lisa, I had the same experience as you… watching it unfold without knowing Jennifer. I too gave my husband an enormous hug, and made him a peach cobbler to share tonight (as we don’t eat peanuts). Lovely post.
