This is the only way I’ll eat avocado. Mashed and spread of carbs.

Ok, or pureed… and in something else. Like soup.

I’m not the girl taking a fork or spoon and digging in. I’ve tried, I think it’s a texture thing. Let me guess, you’re happy with just an avocado and a spoon? Alright, can we still be friends?

My mom turned me onto avocado toast years ago and completely forgot about it until I saw Caitlin tweet about this. Yes, this is in fact the best breakfast, ever. I’ve been eating it all week long and sometimes for an afternoon snack, I’ll add a slice of tomato over the spread. Oh my goodness, yum. Avocado is a {healthy} fat that’s important to incorporate into your diet. See nutrition facts, here.

For avocado toast, here’s what you’ll need…

  • 1/2 Avocado
  • 1 piece of bread

That’s it.

If you can’t do chunky, mash the avocado (see picture below) then spread a thin layer over a piece of toasted bread. I spread it over my FAVORITE gluten-free bread. Delish. Last, sprinkle some salt + pepper and before you take a bite, be prepared to fall in love.

    I seriously eat avocado toast for breakfast twice a week. Except mine has a thin layer of mayo underneath. Which I think makes it not a good thing for Health Week, but whatevs.

    I can’t eat it with a spoon, but I eat the sh&* out of some guacamole!!! 🙂 haha. I sound so classy, right? This looks so yummy!

    Okay, I admit it ~ I eat it with a spoon! But with a little S&P and some balsamic vinegar and it’s so yummy!!!! But this looks delicious, and is so easy. I actually never thought about having it this way, but I can easily see this as a new breakfast/snack staple for me. Thanks ;-)))

    I’m loving Health Week! I plan to try Curried Eggplant + Quinoa Burgers. It’s hard to find healthy recipes laid out with luscious photos in elegant settings. The visual vibe makes me want to prepare these recipes as an indulgence- not as a bracing self-discipline (the usual health food angle). Hooray for health food presented like cupcakes!!!

    yum! i love this snack/breakfast — I make it all the time, sometimes with a slice of cheese, or with whipped cream cheese & avocado, and always a squeeze of lemon — and Udi’s is THE BEST!

    I am loving this, just finished some for a light tea! My 3 year old is going through a phase of wanting hard boiled eggs but refusing the yolk so I just mashed those in with the ‘cado – very tasty!

    I do a variation of this! It’s my favourite go to snack. I toast the baguette (or bread), rub a small piece of garlic atop as well as a halved tomato (so you get the juices). Then, I spread the avocado, add s&p and a little parm and voila! Too good.

    I know a recipe just like this, only with a littble bit more flavor.
    Mix the avocado with pepper, salt, cut up red onion, cilantro (or parsley) and then put it on your bread. If you want to you can also put some chicken filet (for bread), or turkey or smoked salmon to it. And if you’re going all-out add some chopped up walnuts.
