{Birthday} Gluten-free Rainbow Pancakes

Today’s my birthday and thought, if I could have anything what would it be? Yep, rainbow GLUTEN-FREE {pan}cakes!
Birthday Plans: I’ll be spending the morning with my husband before dropping him off at the airport. I’ll drop him off at departures, drive a few feet to arrivals where I’ll be picking up my best friend! Eek! It gets even better. Her and I will be driving in San Francisco where we’ll meet up with my sister (double eek!), check into the hotel, where we’ll be staying for the weekend and then the obvious. Break open that bottle of champagne that I stashed in my bag. I love birthday’s mostly because it’s a chance to drink spend with those you love.

ps. In case you’re interested, I found natural decorating (a.k.a. food) coloring from Whole Foods, called India Tree.
Gluten-Free Pancakes Recipe
Ingredients
- 1 cup of Pamela’s baking/pancake mix {I’m not paid to use their products, it’s just what I have on hand, all the time)
- 1 large egg
- 3/4 cup water (or you can use milk instead)
- 1 Tbsp oil
- 1 tsp vanilla extract
- 1/2 tsp salt
Directions
In a large mixing bowl, combine all ingredients until there are no lumps. Batter should not be runny or too thick. If it’s too thick, you may add additional water if needed. If you want to add food coloring, see * below before proceeding. Spray griddle with cooking spray and pour about 1/4 cup batter onto a preheated (medium-low) griddle. Cook until golden brown – a good sign is when you see little air bubbles, then it’s time to flip. Only flip once. Serve immediately.
**For food coloring – separate the batter into individual bowls. The number of bowls depends on how many different colors you want to make. Stir in the food coloring. Continue reading, above.
