{Healthy Eating} Day 5: Kale Chips!

Let’s be honest here, who actually likes raw kale? Not me. If you’re shaking your head yes right now only because you drown it in dressing, that doesn’t count. Sorry.

However, toss with olive oil, sprinkle with some sea salt and throw in the oven… Ok, now we’re talking! Delicious!! Just like a bag of potato chips, you can’t stop at just one, well that was me with the kale chips. Minus the guilt. As we head into the weekend and if you’re truly dedicated to healthy eating (hello resolutions), then put that bag of potato chips down and go for the kale chips. I know it sounds crazy, but you’ll thank you. At least you’re ass will. Happy Friday, everyone!

Kale Chips Recipe

Ingredients

  • 1 bunch of Kale
  • 2-3 Tbsp olive oil
  • course sea salt

Directions

Preheat oven to 350 degrees.

Remove the ends of the stems of the Kale, rinse. Make sure the kale leaves are dry – use either a salad spinner or a towel. Tear the leaves into bite size pieces.

Place the {dried} kale leaves into a mixing bowl. Pour the olive oil and massage into the leaves well. Place leaves on a baking sheet – might need to divide between two baking sheets. Sprinkle the leaves with a generous amount of course sea salt and place them into the oven.

Bake for 15-20 minutes until the leaves are crunchy. Best to enjoy these the same day.

    I made these the other night! Super tasty! I think I accidentally over salted them, so round 2 will be slightly less salty. I was surprised by how light and thin they were! Great idea!

    We are on our 3rd batch of kale in a week. John and I decided over the weekend that Kale will be the first thing planted in our spring garden. Cannot…repeat….cannot get enough of these kale chips. Sitting here at my desk right now…munching away. They actually kept well overnight, usually…they have not lasted that long!

    I’m SO relieved I’m not the only person who hates raw Kale. I even dislike cooked kale, however I bet I’d love it this way. Trying this ASAP!
