Two things. One: I love persimmons & could {often times do} eat them every day.  Second, I received a generous package of Sahale Snacks, oh my goodness yum! Word must have gotten out that I’m a snacker. Healthy snacker. Honestly, I had always seen the packaging at Whole Foods and even at my gym, but had never given them a try. Unfortunate for me, yes. Now {finally} for the official taste test… yeah, these tasty treats didn’t stand a chance and with all my travels, I found they fit perfectly in my carry on.

Are you sitting there asking yourself what a persimmon is? Are you from Washington State? I swear I never saw or heard of a persimmon until we moved to California. I remember this time last year a co-worker had purchased two persimmons at the Farmers Market, which we frequently visited every Wednesday. When I saw the two items sitting on her desk, I’m sure what came out of my mouth was something along the lines of,  “oh those look delicious” yet my facial expression said “what the hell is that?!”

Back to the two; my love for persimmons and the package of Sahale Snacks, I decided to give this salad recipe a try. Delicious! My husband and I made the clean plate club. Since I can’t do dairy, I substituted the feta for goat cheese & it was just as good. We compared.

Bibb Lettuce Salad with Persimmons and Sahale Pecans

1/4 cup lemon juice

1 Tbsp honey

1 Tbsp golden brown sugar

6 Tbsp extra virgin olive oil

salt + pepper

2 heads of Bibb lettuce, torn

4 Fuyu persimmons, peeled & sliced

1 cup feta cheese

Sahale Pecans {cranberry + black pepper + orange zest}


Whisk together the dressing (first 4 ingredients). Add salt + pepper. Mound the lettuce in the center of the plate. Top with persimmons, drizzle with dressing and then sprinkle with cheese and pecans.

Serves 8
