Fact: I like champagne. a lot. This evening the waitress reminded me that there doesn’t need to be a special occasion to drink champagne, but every day is a celebration, and that’s reason enough to enjoy a glass of bubbly. Amen to that, sister!

As our Minneapolis adventure continues, I can guarantee you that a few more champagne cocktails will be consumed {by me} this weekend. BTW, I’m having lunch with one of my favorite bloggers, Jenna from Eat Drink Pretty. I owe her a HUGE thank you for being the fabulous person that she is and took the time to send me an entire list of the best restaurants and various hot spots to check out here in the city. She’s got great taste, no question about that and I look forward to finally being able to meet her!

Now, I give you all permission to celebrate this weekend with a mimosa ~ Cheers!

{Recipe}  Mimosa

3/4 cup of champagne

1/4 cup of orange juice

Directions:

Mix three parts of your favorite sparkling white/champagne with one part of orange juice and enjoy!
