Cheers to a great weekend ahead! Happy Friday, everyone!

Fresh Tomato Salsa recipe

(recipe adapted from Epicurious)

  • 6-7 plum tomatoes, cored, halved and seeded
  • 3/4 medium white onion, minced
  • 1 green chili peppers – 2 if you like it hot
  • 1 garlic clove, minced
  • 1/2 cup chopped {fresh} cilantro – I did closer to 1 cup
  • 5-6 limes, freshly squeezed (2-3 Tbsp)
  • 1 tsp sugar
  • salt

Chop {seeded} tomatoes into 1/4-inch pieces and transfer to a bowl. Seed and finely chop chili peppers. Finely chop enough onion to measure. Chop cilantro. Stir chilies, onion, cilantro, and garlic into tomatoes with sugar and lime juice and salt and pepper to taste. Salsa may be made 1 hour ahead and kept at cool room temperature

Thank you George for all the fresh {& beautiful} ingredients from your garden. I was able to double this recipe with the several pounds of fresh tomatoes you brought to us and within 2 days, the salsa was gone. Absolutely delicious!!
