Looking for a healthy way to celebrate Cinco de Mayo AND save some cash? Here are a few ideas & recipes:
{Healthy} Margarita
- 1.5 oz of Tequila
- 1 tbsp of agave nectar (OR Crystal Light powdered mix: Raspberry Ice)
- 5 oz of water
- 1 oz lime juice
Combine all ingredients, mix well and serve over ice. Or, for a frozen one, place all ingredients (dissolve Crystal Light in water first) in a blender with 1 cup crushed ice, and blend on high until well mixed. Optional: Garnish with a slice of lime. Serves 1 (cal: 105, fat: 0g, sodium: 15mg, carbs: 3g, protein:0) (Source: Hungry Girl). If you prefer beer, then go ahead and crack open a Corona Light – don’t forget the lime!
{Healthy} Chicken Fajita Tostadas
- 2 medium onions, thinly sliced
- 2 bell peppers (ribs & seeds removed), thinly sliced
- 1 box (10oz) frozen corn kernels
- 1 cup fresh salsa
- 2 Tbsp olive oil
- course salt & ground pepper
- 2 cups shredded cooked chicken breast
- 4 corn tortillas (6″)
- 1/2 cup shredded sharp cheddar cheese (option: reduced fat cheese)

{Healthy Dessert} Tequila-Soaked Fruit
- 1/4 watermelon (2 pounds)
- 1 mango, peeled
- 3 oranges
- 1/2 cup tequila
- 1 Tbsp lime zest
Cut watermelon and mango into 1-inch cubes. Slice off rind and pith from oranges; cut in half lengthwise, place flat sides down, and cut into semicircles. Place all fruit in a large dish and sprinkle with tequila. Set aside for up to an hour. Grate lime zest over fruit. Skewer and serve. (Source: Martha Stewart)
